What is the purpose of this ? Won't all the fluid in the system be swapped for new any way ?
Or does it force all the bubbles trapped on edges/corners up to the lever ?

I'd guess the latter. That way it would be fresh no bubbles in, flushing out old no bubbles. Less chance for new bubbles. Just a guess though.

God damn big yellow birds....

We do this at work pretty regularly on problem brakes, if we have time to let it sit and don't necessarily feel like doing a full system bleed on a new brake, no need to replace brand new fluid.
When you pull the lever it pushes the pistons out filling the caliper with fluid. Think of the system as separate from the reservoir (open system) vs something like avid elixirs (closed system). The system is now full, by letting it sit over night any bubbles in the system will float up to the master cylinder. When you take the zip tie (rubber band) off, the master cylinder piston (plunger) pulls back and draws those bubbles through the now open port into the reservoir making a lever bleed more effective. Instead of just releasing the lever you can physically push the pistons back into place, this helps push the bubbles into the reservoir.
