The first set to come through the shop took three of us to get in. Now the unlucky guy that does most of them has it down to one man and about an hour to an hour and a half for a set.

I'm not sure what the big deal is. Maybe you guys are putting on downhill tires. The first tire was a pain but since I got the hang of it I've easily installed several maxxis exo tires and recently installed a specialized grid tire with only my hands. The trick is to get as much of the tire on until it gets tight. Then stop. Now get 100% of the already mounted bead pushed in to the center of the tire. This takes a little practice but becomes easy. Then starting at the point furthest from the unmounted part, massage any slack towards the unmounted part. Now you can easily get the rest in with Pedro's tire lever.
