What’s the ZK and the logo next to it stand for? I’ve never seen that on any Maxxis tire before..

That's a production name for the 'breaker' labeled casing they've been testing for a while. From what I gather it borrowed from the puncture resistant kevlar composite (K2) casings previously used on some of their road tires but has been further refined for other applications. The shield icon is the same as what they used for K2. I'm going to guess that it would be similar in concept to the Aramid reenforced casings used by Vee and eThirteen.
